Review: Fagor Pressure Cooker

A pressure cooker is basically a metal pot with a lid. The lid components vital to the function and operation of the pressure cooker are the rubber-sealing gasket, pressure regulator, and pressure-relief valves. When the lid is properly locked into place on the pressure cooker, an air- and steam-tight seal is created. As the cooking liquid in the pressure cooker is heated over high heat to the boiling point (212 °F), steam is created. Since the steam cannot escape from the sealed pressure cooker, it remains trapped inside and pressure is created. The internal cooking temperature will vary depending on the different levels of pressure created by the trapped steam. The amount of pressure is measured in pounds of pressure per square inch (psi). Some of our models only cook at high pressure, while others have two pressure levels. In developing and testing the recipes contained in this book, high pressure was used for each recipe with excellent results. For the most part, foods cooked under high pressure are cooked at 250 °F, which is 38 °F hotter than when food is boiled in a normal pot and speeds up the cooking process considerably.







Pressure Cooking at High Altitudes
If you are cooking at high altitudes the cooking times must be longer, as water and cooking liquids come to a boil more slowly. A rule of thumb to remember is to increase the cooking time by 5% for every 1,000 feet above the first 2,000 feet ( 3,000 feet above sea level, add 5% to cooking time; 4,000 feet, add 10% ; and so on). Since the cooking times increase at altitudes higher than 2,000 feet, you will also have to add more cooking liquid to compensate. There are no fixed rules, so try increasing the cooking liquid by approximately half the percentage of the additional cooking time. For example, if the cooking time is increased by 10%, increase the cooking liquid by 5%.

Before I even pitched Fagor I researched the benefits of Pressure Cooking since we are always looking for a better & healthier way to prepare our food! Not only is cooking with a pressure cooker healthier the food just tastes better! One of the reviews on Amazon described using a pressure cooker as a slow cooker on steroids! Not only do you get a great taste it's super fast!

The variety of foods that you can cook in a pressure cooker is amazing from soup to desserts to complete meals. Also with the Duo 10 quart you can can foods on all domestic cooking surfaces: gas, electric, ceramic & induction! I know that it's hard to find a pressure cooker that will can on a flat top.

I received the 8 quart which came with the above basket! This basket is great for draining pasta or steaming vegetables! The cooker's lid offers a long handle made of black heat-resistant plastic for comfortable use.

One thing I did worry about was safety since I'm brainless sometimes when it comes to cooking! What I love about the Fagor is the safety-lock handle, visual pressure indicator, and an automatic pressure-release setting which ensures the lid won't come off unintentionally.

CREAMY CHEESECAKE

Serves 4
1 tablespoon butter
2 teaspoons grated lemon zest
2 tablespoons flour
Cookie crumbs
6 tablespoons sour cream
2 (8 ounce) packages of cream cheese
2 eggs
3/4 cup sugar
2 egg yolks
1/4 cup heavy cream
2 cups water
2 teaspoons vanilla extract

DIRECTIONS
  1. Butter a pressure cooker baking dish. Sprinkle with cookie crumbs and set aside.
  2. In a food processor, blend the cream cheese, sugar, cream, vanilla, lemon zest, flour, and sour cream. Beat in the eggs and egg yolks, pour into baking dish and cover with aluminum foil.
  3. Pour 2 cups of water into the Pressure Cooker. Place the cheesecake in the Cooker Basket and lower into Cooker on top of a trivet. Close lid, bring to high pressure and cook for 30 minutes. Let the pressure drop naturally, remove the lid and take out the cheese cake. Loosen the foil, cool, then chill, preferably overnight. Spread fruit preserves in a thin layer over the cheesecake and serve.
Pressure Cooking Time: 30 minutes

BARBEQUE SPARE RIBS

Serves 4


Try this recipe for the most tender barbeque ribs you have ever tasted! Forget boiling ribs before cooking or slow grilling them for hours, because when you use your pressure cooker you cut 70% of the usual cooking time off. The result is succulent spare ribs that taste great yet take much less time.


1 Tablespoon vegetable oil
1 medium onion, chopped
2 garlic cloves, chopped
2/3 cup prepared barbeque sauce
1/2 cup water
3 pounds pork spare ribs
1/4 teaspoon salt
1/8 teaspoon black pepper



DIRECTIONS

  1. Heat oil over medium heat in the pressure cooker and sauté onions and garlic for 2 minutes. Stir in barbeque sauce and water and simmer 5 minutes.
  2. Add spare ribs and close pressure cooker lid. Bring to high pressure and cook for 18 minutes. Release pressure using the cold water release method.
  3. Remove ribs from the cooker and transfer to an oiled broiler rack. Season with salt and pepper. Position broiler pan 6 inches from source of heat. Broil lightly on one side and remove from oven.
  4. While ribs are broiling, boil remaining cooking liquid over medium high heat until it begins to thicken (about 5 minutes). Brush the thickened sauce over the ribs and broil for an additional 2-3 minutes. Turn over, brush sauce on and broil for 2-3 more minutes. Serve hot.

Wow that was a lot of information. I have been using a slow cooker for years and never have tried a pressure cooker however my mother used one all the time. I can remember growing up if I herd the tsss tsss sound that meant we were having a delicious rump roast. One day we were all ready to eat a delicious rump roast and the cover to the pressure cooker wouldn't come off. We tried everything. Even a hammer lol I'll never forget my father throwing the pressure cooker in the trash rump roast and all sputter some profanity as he did so lol You never see him get mad or swear but that day he wasn't very happy to say the least~! That pressure cooker must of been 30 years old and this Fagor looks nice compared to the one we had. I'd love to own one to do some canning with. Not to mention a nice rump roast. I like how the cooking time is cut to 70% of the time. Wow you can cook a whole chicken in 15min. Maybe I should give a Fagor pressure cooker a thought for this house. We make big meals but are always short for time. Thanks for all the great info in this post~!

Pressure cookers are by far not a new invention, but with improved technology they have become safer and easier to use than ever.
I love to cook soups. Homemade soup is delicious and perfect in the winter months, but nothing is worse than waiting hours upon hours for your masterpiece to be complete and ready to eat. Even worse, soups are generally better the next day, giving you even longer to wait.
